Kale and Cabbage Stir-Fry with Avocado-Ginger Dressing
Ingredients
Avocado-Ginger Dressing
- 1 avocado
- 2 tsp fresh ginger cut into tiny pieces
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp raw honey or grade B maple syrup
- 2 tsp grated lemon zest
- pinch sea salt to taste
Stir-Fry
- 2 tbsp olive oil
- 1 medium red onion halved & sliced
- 2 cloves garlic
- 1/4 tsp sea salt
- 1 small head red cabbage
- 1 bunch kale
- 4 cups baby spinach
- 2 tbsp sesame seeds lightly toasted

- 1 medium red onion halved & sliced
- 2 cloves garlic
- 1/4 tsp sea salt

- 1 bunch kale
- 4 cups baby spinach
- 2 tbsp sesame seeds lightly toasted

Instructions
To make dressing
In a food processor add ginger and mince, add all other ingredients and blend until smooth and creamy. You can add more lemon juice or water to thin out dressing if it is to thick for your liking.
To make stir-fry
Heat Olive Oil in wok or large skillet over medium heat. Add onion, garlic, and salt. cook for 5 minutes or until onions are soften. Add kale, and cabbage with 1/4 cup water, cover and steam for 3-5 minutes. Uncover and add spinach until lightly wilted. Take fresh spinach and arrange on plate, add mixture over spinach, drizzle dressing, and sprinkle with sesame seeds.
