Ingredients
Avocado-Ginger Dressing
  • 1 avocado
  • 2tsp fresh gingercut into tiny pieces
  • 2tbsp lemon juice
  • 2tbsp olive oil
  • 1tbsp raw honey or grade B maple syrup
  • 2tsp grated lemon zest
  • pinch sea salt to taste
Stir-Fry
  • 2tbsp olive oil
  • 1medium red onionhalved & sliced
  • 2cloves garlic
  • 1/4tsp sea salt
  • 1small head red cabbage
  • 1bunch kale
  • 4cups baby spinach
  • 2tbsp sesame seedslightly toasted
Instructions
To make dressing
  1. In a food processor add ginger and mince, add all other ingredients and blend until smooth and creamy. You can add more lemon juice or water to thin out dressing if it is to thick for your liking.
To make stir-fry
  1. Heat Olive Oil in wok or large skillet over medium heat. Add onion, garlic, and salt. cook for 5 minutes or until onions are soften. Add kale, and cabbage with 1/4 cup water, cover and steam for 3-5 minutes. Uncover and add spinach until lightly wilted. Take fresh spinach and arrange on plate, add mixture over spinach, drizzle dressing, and sprinkle with sesame seeds.
