Mexican Black Bean Salad

Ingredients
  • 2 cups Black Beans (cooked)
  • 1 Red Bell Pepper (chopped)
  • 1/4 cup red onion (chopped)
  • 1 avocado (diced)
  • 1/4 cup Lime Juice
  • 1/4 tsp Chili Powder
  • 1/4 tsp Cumin
  • 1/8 tsp sea salt

  • 1/4 cup red onion (chopped)
  • 1 avocado (diced)
  • 1/4 cup Lime Juice
  • 1/4 tsp Chili Powder
  • 1/4 tsp Cumin
  • 1/8 tsp sea salt
Instructions
  1. In a large mixing bowl combine the black beans, pepper, onion and avocado.
  2. Add the lime juice, chili powder, cumin, and salt to a mason jar. Seal with a lid and shake until combined. Pour dressing over the black bean mixture and stir until evenly coated.
  3. Serve chilled and enjoy.
Recipe Notes

More Flavor

Add cilantro, tomato, corn or hot sauce.

No Black Beans

Use cooked lentils or chickpeas instead.
